Spice Cookies

Today I was feeling a bit nostalgic and decided to make some spice cookies.  This recipe was passed on to me from my mother and this is one of my favorites.  These are wonderful to make just before having company over, as the house will smell of molasses, cinnamon, cloves, and ginger.

Spice Cookies

INGREDIENTS:
2 1/2 cups flour
2 teaspoons baking soda
1/2 teaspoon cloves
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/4 teaspoon ginger
3/4 cup butter
1 cup sugar
1 egg
1/4 cup molasses
confectioner sugar

DIRECTIONS:
Step 1:  Mix together flour, baking soda, and spices.

Step 2:  In a bowl, beat together butter, sugar, and egg until fluffy.  With a wooden spoon, beat in flour mixture alternately with the molasses; beat well.  Refrigerate covered dough for 1 hour.

Step 3:  Heat oven to 375 degrees and lightly grease cookie sheets.  Shape dough into 1/2 inch balls.  Roll in confectioners sugar.  Place 1 inch apart on cookie sheets.  Bake 8 – 10 minutes.

Step 4:  Remove to rack and sprinkle with confectioner sugar while still warm.

This recipe will make between 5 and 6 dozen cookies. Enjoy!
